Here is an easy way to add vegetables to your meal.
Make this easy and nutritious salad.
Vegetarian friendly SALAD recipe. I just served it with rice made with chicken stock and salmon.
Salad:
Chickpeas, 16 oz can
1/2 Cup Grape Tomatoes
6-8 sliced Sweet mini peppers
1/4 Cup onion
English Cucumber, sliced
Avocado, cubed
Drizzle Sunflower oil
Lemon juice, 1 whole lemon
1/2 teaspoon Paprika
1 teaspoon Chili powder
1/2 teaspoon Garlic powder
Salt & pepper, to taste
To make the rice:
Rice
Canned crushed tomatoes
Chicken stock
Salt & pepper
Salmon seasoned with:
Lemon pepper
Paprika
Salt & pepper
Serve over chopped romaine.
Make it for dinner and save some for lunch the next day.
