Ingredients: 3 eggs 3/4 cup greek yogurt 1/4 cup apple sauce 1/4 cup butter 1 1/2 gluten free all purpose flour 3/4 cup coconut sugar 2 tbsp lemon juice 2 tsp baking powder 1 tbsp lemon zest Icing: 3/4 cup powdered sugar 1-2 tbsp milk 1 tsp lemon juice Instructions: Preheat oven to 350F In a mixing bowl, whisk the eggs Then add in the rest of the wet ingredients: Greek yogurt, applesauce, lemon juice, & melted butter Whisk together Then combine dry ingredients: Flour, sugar, lemon zest, baking powder Mix together Add to a loaf pan lined with parchment paper Bake at 350f for 40-43 minutes Let cool completely In a small bowl, mix icing ingredients together.
