Hi everyone!

In today’s video I’m just sharing what meals I had on a cozy Winter day! I enjoyed my smoothie for breakfast because that’s a great way of me making sure I get my energizing fruits and extra greens in my diet. I did however have a cozy and comforting snack and dinner though! I made a super Healthy and Cozy Veggie Stew for dinner. It turned out so tasty that I thought I’d share my recipe with you all! It’s favourite at my house!

Cozy Winter Stew

– 1 cup cherry Tomatoes, halved
– 1 small Zucchini, chopped
– 5 cloves of Garlic, minced
– 2 cups Carrot, chopped
– 1.5 bag of mixed baby Potatoes, halved
– 1.5 -2 cups of frozen Edamame
– 4 cups Kale, chopped
– 2 1/2 – 3 cups filtered water
– 3-4 Tbsp. Of Coconut milk (optional)

Seasonings:
1 Tbsp. Better Than Bouillon
2 Tbsp. Onion Powder
1 Tbsp. Paprika
1 Tbsp. Curry Powder
1 tsp. Turmeric Powder
1 tsp. dry Oregano
1 tsp. dry Parsley
1 tsp. dry Thyme

Add Salt & Pepper when serving if desired.

Method:

1. Water Sauté Garlic & seasonings.
2. Add in all the veggies except the kale in a large pot.
3. Add 2 1/2 – 3 cups filtered water
4. Give everything a good mix and cook for 12-15 minutes with the lid on. Give it a mix every now and then.
5. Add in the kale and optional coconut milk. Cook for another 2 minutes.

Note:
Add more water if needed. I use a Dutch oven pot so my stew cooks up in less than 15 minutes. Depending on your pot, you may need to cook it a little bit longer.
