Garlic Ramen with Chicken and Broccoli

Ingredients:
• 3 packs (3oz each) instant ramen noodles (Top Ramen)
• 1 lb (454g) broccoli
• 1 lime
• 1 whole large bulb of garlic
• 2 TBS (30ml) Olive oil
• 2 TBS (30ml) sesame oil, divided
• 1 large chicken breast
• 1 bunch of green onion
• 4 TBS (50g) brown sugar
• 3 ½ TBS (52ml) soy sauce
• ½ TBS (7.5ml) rice vinegar
• ½ tsp (1.2g) ground pepper
• 1 tsp (2.8g) ground ginger
Instruction:
GENERAL: this instruction utilizes prep, cook (and clean) simultaneously for the best efficiency. However, you can always do all the prep works first before starting the cooking. Also adjust heat accordingly to your situation as our stoves and speeds in cooking varied.
1. Bring a medium pot of water to a boil; then cook ramen (discard seasoning packs) until just soften (about 2 minutes); drain off liquid; set aside
2. While ramen pot is being cook; start washing, cutting broccoli to bite-size pieces; cut lime to wedges
3. Mince or press garlic to a large pan; turn on medium heat; add Olive oil and 1 TBS (15ml) sesame oil. Add broccoli; stir then let cook until garlic turn light brown
4. In the meantime, dice green onion (keep the white and green part separately), set aside; slice chicken into thin slices then add it to the pan (once the garlic lightly browned); stir occasionally
5. Meanwhile, in mixing container, mix soy sauce, brown sugar, vinegar, ground pepper, ground ginger together. Do some cleaning if you’d like
6. Once chicken is mostly cooked; add sauce to the pan stir and let cook until slightly thicken
7. Add cooked ramen to the pan; stir/mix until sauce is absorbed; drizzle 1 TBS (15ml) of sesame oil; squeeze in half of the lime, and add in the white part of diced green onion; mix and remove from heat
8. Serve immediately; garnish with diced green onion and sesame seeds; squeeze in more lime at the table as an option but highly recommended. Enjoy!
