Best Beef Lo Mein (without Asian store visit)

Ingredients:
+ For the marinated beef:
• 1/3 tsp (2g) baking soda
• ¼ tsp (0.6g) ground pepper
• ½ tsp (3ml) soy sauce
• 1 tsp (5ml) vegetable oil
• 10 oz (285g) flank/skirt steak
+ For the sauce:
• 3 TBS (45ml) soy sauce
• 1 TBS (15ml) toasted sesame oil
• 2 TBS (30ml) oyster sauce
• 1 TBS (7.6g) cornstarch
• 1 ½ tsp (6.3g) sugar
• ¼ tsp (0.6g) ground pepper
• ½ tsp (3g) Kosher salt
• 1 tsp (1.6g) garlic powder
• ½ tsp (2.8g) ginger powder
• 1/3 cup (80ml) water
+ For the rest:
• Bunch of green onion
• 8 to 9 oz (226 – 255g) dry Lo Mein noodles
• 3 TBS (45ml) vegetable/Canola/Olive oil, divided
• 1 large onion
• 10 oz (285g) carrot
• 10 oz (285g) broccoli

Instruction:
GENERAL: this recipe utilizes rep-cook-clean style (all will be done simultaneously); but you can always prep first then cook and clean afterward to your comfort level.
1. Bring water to a boil and cook the noodles for 6 minutes; drain off the water when it’s done cooking and set aside
2. In the meantime, dice green onion, set aside
3. Mix all beef marinate ingredients together in a mixing bowl; slice beef against the grain into thin slices; add to the bowl; mix thoroughly and set aside
4. Place a large pan over medium heat; add 2 TBS (30ml) oil
5. Chop onion to thin slices; add to the pan; halve carrot; chop at an angle to thin slices; add to the pan; stir up.
6. Chop broccoli to bite size; add to the pan and stir occasionally until the broccoli turns deeper green
7. Good time for some cleaning;
8. Push everything in the pan to one side; add 1 TBS (15ml) oil; spread the beef out on the empty side; cook undisturbed until the bottom side is brown
9. Quickly; mix all sauce ingredients together
10. Once the beef is brown on the bottom; stir everything in the pan together
11. Add the cooked noodles; stir then pour the sauce on; use a pair of tongs to mix everything together thoroughly; cook until thickened; taste and adjust seasoning with soy sauce/salt/pepper if needed; remove from heat
12. Serve warm; sprinkle some diced green onion for garnishing. Enjoy!
