Recipes:
Farro Salad:
Lemon Whoopie Pies
Makes 10
Dry Ingredients
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1 pinch turmeric (for color, optional)

Wet Ingredients
1 tbsp ground flaxseed meal
2 tbsp water
1/2 cup almond milk
1 tbsp fresh lemon juice
1 cup cane sugar
2 tbsp lemon zest (the zest of about 3 lemons)
3/4 tsp vanilla extract
1/3 cup organic vegetable oil, such as organic canola oil or melted refined coconut oil

Frosting
2 oz kite hill cream cheese, softened
1/2 stick vegan butter, I sue Earth balance sticks, softened
1/2 tsp vanilla
1 tsp lemon jucie
2 cups powdered sugar
Pinch salt

Preheat the oven to 350 degrees. Mix the flaxseed meal and water in a small bowl and set aside. Then zest three lemons and measure out 2 tbsp of zest. Set aside for now.

Next, mix the almond milk and lemon juice. Stir and set aside.

Then combine the dry ingredients in a bowl and whisk to combine. In another bowl, add the sugar, lemon zest, oil, vanilla, and thickened flax egg. Mix well for 1-2 minutes. Then add the dry ingredients, half at a time, and just mix until combined. Careful not to over-mix at this stage so the whoopie pies stay fluffy and tender.

Scoop onto two lined cookie sheets using a medium size cookie scoop. Bake for 15-16 minutes and allow to cool completely before frosting.

Make the frosting by combing the softened vegan butter and cream cheese in a bowl. Use a mixer to beat for 1 minute. Then add the sugar, vanilla, salt, and lemon juice and mix well for another 1-2 minutes.

Assemble the whoopie pies by generously frosting 10 cookies and then top each one with a cookie, like a little sandwich. If the frosting is too soft, place the whoopie pies in the fridge for a few minutes to firm up. Enjoy!
