Stuffed acorn squash is one of my all time favourite dinnertime staples. I love acorn squash in general. My favourite way to eat acorn squash is to cut it in half and eat it with a spoon. This videos shows you how to quickly steam squash in the microwave so you can have dinner on the table in no time.
In this easy steamed squash recipe, I cook the acorn squash in the microwave, then turn it into stuffed squash with some leftover lentil stew and a bit of grated parmesan cheese. It’s a great example of healthy cooking for beginners.
