Ingredients:
1 Lb. Italian Sausage
4C. Chicken Stock
1/2 Yellow Onion, Diced
5 Cloves Garlic, minced
2 Carrots, choppedd
2 Celery Ribs, chopped
1 lb. Tortellini Va C. Heavy Cream 3C. Kale Salt and Pepper to taste
1. In a large pot or dutch oven, brown the sausage over medium/high heat
2. Once browned, remove sausage and set aside.
3. Add a small amount of olive oil in the pot over medium heat.
4. Add the carrots, celery, onion, garlic. Sweat for about 5 minutes.
5. Add the Chicken Stock, and bring to a simmer for 5 minutes.
6. Add the Tortellini and simmer for another 10 minutes.
7. Add the Kale and simmer for the final 2 minutes.
8. Add the cream and sausage, and stir until completely combined. Simmer for 30 seconds, then take off the heat.
9. Add sat and pepper if needed.
10. Serve and enjoy!
