Try this Healthy Banana Bread which is a tastier and healthier version of the classic Banana bread ! Its moist, fluffy and loaded with all wholesome and healthy ingredients ! Pair it with a cup of coffee or chai and enjoy it’s guilt-free bites !!
DRY INGREDIENTS
*1/2 cup whole wheat flour
*1/2 ragi flour/ finger millet flour/ nachani
*1 tsp baking powder
*1/4 tsp baking soda
*1/4 tsp salt
*1/2 tsp cinnamon powder/ dalcheeni
WET INGREDIENTS
*3 mid sized ripe bananas
*2 small eggs
*about 1/2 tsp vanilla extract/ essence
*2 tbsp oil
*3 tbsp jaggery powder/ sugar/ honey/ maple syrup
*about 1/4 tsp lemon zest
*1 tbsp lemon juice
2 tbsp pumpkin seeds, 2 tbsp chocolate chips to mix in, and some more for garnishing
INSTRUCTIONS
1- Mash the bananas into a bowl ( it’s ok if there are some chunks left ). Keep it aside and prepare the wet mixture.
2- In another bowl, add oil and jaggery and beat it well. Crack in eggs and beat again. Add lemon zest and lemon juice and give a quick whisk. Whisk in the mashed bananas as well and keep it aside till we prepare the dry mixture.
3- At this stage, preheat the oven at 180°C/ 350°F for 10-15 minutes. In a separate bowl, add all the dry ingredients and give it a good mix. Now add this dry mixture into a wet mixture and fold gently( make sure not to over mix ). Add in pumpkin seeds and chocolate chips and fold again.
4- Transfer this batter into a parchment paper lined baking pan. Sprinkle some more seeds and chocolate chips and bake it in the preheated oven at 180°C/ 350°F for 40-45 minutes. Allow it to cool a bit.
Slice it up and enjoy !!
