today we’re making the ideal picnic sandwich/back to school sandwich: a smashed avocado 🥑 and chickpea sandwich 🥪 i was craving fresh, healthy, delicious.

here’s how to make it:

4 slices bread of choice
1 cup chickpeas, drained and rinsed
2 avocados, pitted and cubed 1/4 red onion, finely diced
Juice from 1 lemon
Kosher salt
Freshly ground pepper
Butter lettuce
1 Persian cucumbers, sliced
Extra-virgin olive oil
Handful of sprouts

Set bread on the side. Smash half of the chickpeas using the back of a fork. Transfer to a bowl. I find it easiest to do on a flat surface, like a cutting board. Smash the avocados and add them to the bowl with the smashed chickpeas. Add the reserved whole chickpeas. In a small bowl, mix together the red onion, lemon juice and a few pinches of salt. Let it sit for about 2 minutes. Transfer to the smashed avocado. Mix it all together. Add a few pinches of salt and black pepper and give it a taste; adjust according to flavor.

To assemble, add a piece of butter lettuce, add a layer of the smashed chickpeas, top with sliced cucumbers, a drizzle of extra-virgin olive oil, salt, pepper and sprouts.
