Litti Chokha
Bihari Litti Choka is healthy meal you can enjoy at your dinner. Litti is Indian Baked Bread from which you can get Taste of Bihar. Bihar is a Indian state located in middle eastern side. Litti is made with whole wheat flour so that it is very healthy and filling is made with Sattu
Ingredient Quantity
For Litti:
Whole Wheat Flour 1½ cup
Salt to taste
Water as required
For the Stuffing:
Sattu flour 1 cup
Onion chopped 1 no.
Ginger chopped 1 tbsp
Garlic chopped 1 tbsp
Green chilli chopped 1-2 no.
Carom seeds ½ tsp
Salt to taste
Black salt ¼ tsp
Pickle paste 1 tbsp
Lemon juice 1 no.
Coriander chopped 1 tbsp
Mustard oil 2 tbsp
Water as required
For Baingan Ka Chokha:
Brinjal roasted (Large) 1 no.
Tomato roasted 2 no.
Potato boiled 2 no.
Ginger chopped ½ tsp
Garlic chopped ½ tsp
Green Chilli Chopped ½ tsp
Onion chopped 1-2 tbsp
Salt to taste
Coriander chopped 1 tbsp
Mustard Oil 2-3 tbsp
Other Ingredient:
Oil for frying
Ghee for serving

For Baingan Ka Chokha:

Method:
For Litti:
1. Add whole wheat flour, salt and water in a bowl, mix well and knead medium soft dough. Keep aside for 5 minutes.
For the Stuffing:
1. Take another bowl, add Sattu, onion, ginger, garlic, green chilli, carom seeds, salt, black salt, pickle paste, lemon juice, coriander chopped and mustard oil and mix well.
2. Add little oil and mix well and keep it aside.
For Baingan ka Chokha:
1. Remove the skin of the eggplant, tomato and potatoes and place it on a mixing bowl.
2. Mash it well.
3. Add salt, chopped chilli, garlic, ginger, onion, coriander leaves and mustard oil and mix well. Keep it aside.
Assembling the litti:
1. Take out a large lemon sized dough and make it into a ball.
2. Roll the dough ball to make a 4-5 inch circle.
3. Keep 2 tbsp of filling in the centre of the dough and bring the ends together, nicely seal the ends.
4. Make all the litti in the same manner.
5. Heat oil in a pan and fried the litti till golden brown in color.
6. Remove in absorbent paper.
7. Break the fried litti pour some ghee on top and serve hot with chokha
