RED LENTIL PUMPKIN MUFFIN 🎃 Vegan Weight Loss!!

These muffins are oil free, sugar free, gluten free, low fat, high protein and SO darn delicious 🙌 These are some of the healthiest muffins I have ever made and they are my favourite by far ✨

Ingredients
2 cup red lentils, soaked in boiling water for 20mins
1 cup pumpkin purée
1 ripe banana
6 medjool dates
1 cup plant milk (I used soya)
2 tsp baking powder
2 tsp apple cider vinegar
3 tbsp chia seeds
1 tsp vanilla
2 tsp pumpkin pie spice 🎃

Frosting:
3 tbsp plant based yogurt (Greek style is best)
2 tbsp pumpkin purée
1 tbsp peanut butter powder (optional)
1/2 tbsp maple syrup
1/2 tsp pumpkin pie spice

Blend all the ingredients until thick and smooth. Into some muffin tins and into the oven for 30-35mins at 180 degrees Celsius.

Smother in your healthy frosting and try not to eat them all 👌
