Beetroot Falafel Written Recipe :
Ingredients :
Beetroots raw 350gm
Potato 150gm
Red onion 125gm
Garlic 2 cloves
Fresh parsley ½ cup
Chickpeas 2 cans
Ground cumin 1 tablespoon
Ground coriander 1 tablespoon
Smoked paprika 1 tablespoon
Cumin seeds 2 teaspoons
Cayenne pepper ½ teaspoon
Fine sea salt 1- ½ teaspoons
gram flour ¾ cup
Instructions :
Heat the oil. Peel and roughly chop the beetroot, sweet potato, and red onion and place in a food processor with the garlic and parsley. Whiz until all ingredients are finely chopped. Tip into a large mixing bowl.
4 medium beetroots,1 small sweet potato,1 small red onion,2 cloves garlic,½ cup fresh parsley
Place the chickpeas into the food processor and whizz until very finely chopped. Add the to the bowl with the vegetables.
2 cans chickpeas
Add the ground spices, salt, and gram flour to the bowl and mix until well combined. Add more gram flour if the mixture is still wet and sticky – you should be able to roll balls of the mixture without getting too messy!
1 tablespoon ground cumin,1 tablespoon ground coriander,1 tablespoon smoked paprika,2 teaspoons nigella seeds,½ teaspoon cayenne pepper,1 ½ teaspoons fine sea salt,¾ cup chickpea flour
Roll the mixture into golf ball-sized pieces – deep fry them when they’re done, they should look slightly cracked on top. Leave to cool before serving.
Whole Wheat Pitta Bread Written Recipe :
Ingredients :
Lukewarm water 1 cup
Dry yeast 2 teaspoons
Honey 1 teaspoon
Whole wheat flour 1½ cup
All-purpose flour as required
Salt 1 teaspoon
Extra virgin olive oil 1 tablespoon
Instructions :
Make the Dough :
In the bowl of your stand mixer, mix the water, honey, and yeast together and let it sit for about five minutes. Add the flour, salt, and olive oil and mix for a couple of minutes, until it comes together. Sprinkle a little bit of flour onto your clean work surface and turn out the dough.
Knead the dough for about 5 minutes, until it’s smooth and elastic. Adding more flour only if necessary.
Make a Ball :
Place it into an oiled bowl, cover it, and allow to rest until doubled, about an hour. Shape and bake Gently deflate the dough and turn it out onto a lightly floured work surface. Divide it into 9 equal pieces and shape each piece into a ball. Using a rolling pin, roll each ball into a circle about ¼ inch (½ cm) thick. Lift and turn the dough frequently as you roll to make sure it isn’t sticking to your counter. Sprinkle with a little extra flour if it starts to stick.
Cover the circles with plastic wrap or a clean damp cloth.
Preheat the oven to (230°c) and place a baking stone or a baking sheet on the middle rack.
When the oven is ready, transfer 3 pitas at a time ( or more if your oven is big) onto the baking surface and bake for 4 to 5 minutes, or until the pitas balloon fully.
Remove the bread from the oven and repeat with the remaining pieces of dough.
Allow the homemade whole wheat pita bread to cool and serve as desired.
