Ingredients:

– 2 tablespoons olive oil
– 1 red or yellow onion, chopped
– 2 chili peppers, seeds removed and sliced 🌶️
– 3 cloves of garlic, crushed
– 4 ripe tomatoes, chopped 🍅
– 1 tablespoon double-concentrated tomato paste
– ⅓ teaspoon turmeric
– ⅓ teaspoon cumin
– Chili pepper to taste
– 4 large eggs 🥚
– Salt and pepper
– Bread for serving 🍞

Instructions:

1. Heat oil in a large skillet or frying pan over medium-high heat. Add onion and chili, cook for 5 minutes, stirring often.
2. Add garlic and cook for about 1 minute or until fragrant. Add tomatoes, tomato paste, and 4 tablespoons of water. Season with salt and pepper, cook for 2-3 minutes.
3. Add turmeric, cumin, and chili pepper, then add 150 ml of water. Bring to a boil, reduce heat, and simmer until thickened, 20-30 minutes. Add a bit of water if needed.
4. Create 4 egg nests in the sauce. Crack eggs directly into the skillet without breaking the yolks. Cover and cook eggs to your desired yolk consistency, 5-10 minutes.
5. Serve hot directly from the skillet with bread. 🍽️
