I don’t count calories, track macros, restrict carbs, or do any of the other things. I just eat and enjoy my food because my eating style focuses on eating volume and filling my belly!

Focusing on nutrient-dense food that is low on the calorie density scale has allowed me to eat more food while weighing less! I go into much detail about this in the Healthy Vegan Mama Weight Loss Guide.

Constantly feeling satisfied and like I’ve had enough to eat has allowed me to create good, sustainable habits surrounding food.

Breakfast: @plantstrong pancakes (oil-free) in the waffle maker, topped with pure maple syrup. Head to plantstrong.com to purchase the mix.

Lunch: chickpeas, rice, and lots of mini cucumbers. Topped with an oil free sesame sauce from @3dragons_sauce I found at my local H‑E‑B. You can use any oil free sauce. Low-sodium soy sauce works just as great with a little tahini drizzled on top!

Dinner: take 3 corn tortillas out in the oven for 5 mins or until crispy. In a pan sauté black beans and peppers (5 mins, while the tacos are baking). Add a large side of broccoli and top it all with my healthy vegan mama cheese sauce (google that, and it pops up).
