$30 meal plan

Grocery list:
-6 peppers (any color)
-2 blocks tofu
-2 large sweet potatoes
-1 dz eggs
-2 large ears corn
-16 oz spinach
-1 container mushrooms
-1 pack tortillas
-1 onion

Breakfast:
spinach mushroom fritata
Lunch:
Fajitas with onion and roasted tofu w/tortillas
Dinner:
Roasted corn, sweet potatoes and tofu

hello hello it’s time for another cheap
inexpensive convenient meal plan I will
tell you at the end of this video how
many meals this makes in total but just
remember that like my size meal might be
different than your size meal it’s just
like a portion of what I would eat to
Cola meal but I have a $30 meal plan on
Deck today it’s nice fresh healthy high
protein perfect for summer all of these
meals you can make as one pan meals or
sheet pan meals you can even make them
on your grill so let me show you my
grocery haul we’re get started right
away into meal number one I have a
breakfast a lunch and a dinner option
today here are my
ingredients okay I got three red peppers
three orange peppers if you do green
peppers it’s always so much cheaper but
green peppers are my least favorite and
these just scream summertime two packs
of tofu and this tofu is so
inexpensive like it’s the most
inexpensive tofu that I can find right
now the hard thing is is it’s always out
of stock so when it’s in stock I usually
grab a whole bunch which I did today and
I put them in my freezer cuz they had
just gotten a shipment in and she was
just stocking the shelves so she was
putting boxes of them up and I’m like hi
I would like 10 of those please it is
extra firm and it’s organic which I
don’t really care if my food’s organic
or not I’ll be honest I’m not like on
the organic train but for the price So
Good by the way they’re
$169 and they’re at Smiths but please
don’t go buy them all I got some frozen
corn the half ears because it is not
corn season so it says super sweet corn
tots let’s hope they’re super sweet I
grew up in sweet corn country so I have
high expectations for corn uh I have low
expectations for this freezer corn but
sometimes it ends up being really good a
pack of baby bella mushrooms a dozen
eggs I got these because they were on
sale and I kind of just wanted to try
them something different they’re like 25
calories per tortilla I don’t really
care about the calories the zero carbs
or anything but they’re sundried tomato
and I thought that sounded really good
like really really good kind of again
has a summer vibe to it as this whole
meal plan does and I was like yes we’re
going to try these and when something’s
on sale it’s the time to try it we got
an onion we got some spinach and we have
two of my favorite sweet potatoes
they’re wiped sweet potatoes or Hannah
sweet potatoes they are a mix between
like a sweet potato and a russet that’s
like the texture so they’re starchier
than a normal sweet potato they are so
delicious but that is how I spent $30 it
was actually
$29.60 but I rounded up to 30 because it
just sounds a lot better let’s get
started with the first meal first thing
I’m going to do is wash my little
mushrooms I like to wash them with a
damp paper towel you can use a reusable
paper towel whatever you have I just
like to wash the dirt off you can also
rinse them but like I find this is the
best way to get them clean

I only got the one onion and I’m going
to use like a third of it is just a
little bit for this recipe and the rest
is going to go for dinner

okay I have the onion yeah the onions
and the mushrooms in this Skillet just
heating up to cook really quick I’ll let
the mushrooms reduce their liquid and
I’m just adding a little bit of garlic
nothing nothing crazy for the garlic I’m
back to adding a little bit of seasoning
to my food usually just salt and garlic
I get that question a lot being pregnant
I don’t like a lot of seasoning with my
food cuz I can always season it later so
I start with just the basics but we’re
going to let the mushroom reduce their
water and then this is only going to
take like 2 to 3 minutes and then this
will be ready to go into our frittata
while those veggies are cooking up I’m
just going to crack my eggs really
quickly into this bowl and get them
scrambled

these are almost done they literally
take no time at
all you see the water is releasing
really nicely I’m going to go ahead and
add all of the
spinach it’ll cook down to basically
nothing which is wonderful cuz you’re
still getting all those nutrients but
like you don’t have to worry about
eating big bites of spinach it just
looks down to it’s

nothing okay here I have a 9×13 in glass
baking dish I did spray it with some
avocado spray cuz I don’t like anything
to stick we’re going to pour everything
in get it in the oven at 4 25 for about
15 to 18 minutes

getting started on lunch I’m going to
finish off this onion I’d love to hear

meals give me some ideas for the grill I
made these meals specifically because I
was like ooh fajita is on the grill but
then we didn’t get the grill put
together or the Blackstone I guess it’s
like a grill I call it a grill so I’m
making them inside but this is like the
last day that I want to cook inside it’s
getting really warm here and I don’t
love having my oven on so I try to cook
really early in the morning so that way
it can kind of cool off because it’s in
the ’90s here every day I think this
week what’s the temperature where you’re
at so we’re moving it outside
we’re we’re making fun summertime meals
outside leaving the heat outside Peppers
so good with onions these fajitas were
amazing like I said stay tuned to the
end and I’ll share with you kind of like
how many meals this entire plan made
based on just like my eating preferences
yes my husband did have some too but
I’ll tell you how many servings it made
so that way you kind of have an idea if
you have a family and want to feed them
for cheap okay got my peppers and onions
on a sheet pan this would be great on
the grill too we just got a grill we
just didn’t put it together yet it just
got delivered so hopefully I have time
to do that this weekend um I sprayed
avocado spray I like aluminum foil just
preference for clean up and got all
these veggies on there and then I’m
going to cut this up put that on there
put in at 425 for about 20 22 25 minutes
roast everything up and we’re going have
some delicious fajitas

I am going to go ahead and put the
seasoning on cuz it sounds really good
hopefully I don’t regret this but I know
my husband will eat it like I said I
tried to not overseason things but
they’re fajitas they have to have
something delicious on them so we’re
going to put a bunch of this on and if I
regret it then my husband will be the
one that eats them but hopefully I don’t
cuz it sounds really good at the moment
this is crada seasoning by L’s and I got
this at Albertson’s I don’t know where
else you can find it but it’s really
delicious to the oven 425 20 25 minutes
till they’re nice and roasty like I said
you can put this on the grill too we
have our egg BAC in there
bam two down one to go all right last
one a little more cutting a little more
chopping first we’re going to do our
sweet
potatoes I like them peeled so I’m
peeling them

okay we have our tofu sweet corn and our
sweet potato once the egg dish is out
I’m going to pop this in 425 probably
for about 30 minutes really those
potatoes are going to take the longest
but the tofu will be super crispy you
can also spray like avocado oil or um
Olive toss it in olive oil this one I’m
leaving seasonless because I’m hoping
fingers crossed it tastes really good
with some hot sauce that’s what I think
sounds really good with this so kind of
like a play on like a shrimp boil I
guess but a little bit different as well
this one can go on the grill it would be
really good if you put it in like a foil
packet or just threw it on the griddle
this would be delicious so we’re kind of
just making some summertime meals this
is dinner for the next few nights so how
many meals did I make for just $3 well
let’s give a little Roundup shall we the
egg bake I split into to six servings so
roughly about two eggs per meal now I
would eat one serving my husband would
eat two servings so just give a little
reference cuz he’s a bigger human and I
don’t have much of an appetite each of
the lunch and dinners I would say are
four servings again that’s what I would
split it into four servings maybe even
five because there’s a lot of potatoes
and vegetables so we have six let’s say
five and five for me that’s 16 meals for
$30 I personally think that’s a bang
deal you cannot even go out to eat I
feel like sometimes and get a single
meal for $30 once you get a drink and a
tip and everything like that so to have
all of this it’s kind of like the what’s
the method cook once eat all week but
again if my husband is having a meal he
has double the portion that I do so just
kind of give you some reference points
in case you are making these meals for
your own family I do like to give like
serving SL meal sizes for me a serving
is a meal cuz if you’re sitting down a
meal is technically breakfast lunch or
dinner so it’s the same thing but I hope
