Greek Health Salad Recipe
Ingredients:
Grape tomatoes or cherry tomatoes
Mini cucumbers (or English cucumbers), sliced
Red onion, thinly sliced
Crisp green bell pepper, chopped
Pitted kalamata olives
Feta cheese, cubed
Dried oregano and dried basil (for seasoning)
Fresh herbs (optional): chopped basil, fresh mint, or fresh dill
Greek Salad Dressing (see recipe below)
Greek Salad Dressing:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon Dijon mustard
1 teaspoon dried oregano
Juice of half a lemon
Fresh basil (optional)
Salt and pepper to taste
Instructions:
In a large bowl, combine the grape tomatoes (or cherry tomatoes), sliced mini cucumbers, red onion, chopped bell pepper, kalamata olives, and cubed feta cheese.
Sprinkle with dried oregano and dried basil.
Prepare the Greek salad dressing by whisking together the olive oil, red wine vinegar, minced garlic, Dijon mustard, dried oregano, lemon juice, and fresh basil (if using). Season with salt and pepper.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
