Rice Salad is a really delicious and healthy food.
Super easy recipe with 5 ingredients only: rice, red pepper, fresh herbs, olive oil and lemon juice.
This salad can be both a main course and a side dish for fish. This recipe is suitable for vegans and for those who lose weight too. This healthy salad recipes support weight-loss goals.

INGREDIENTS (serves 4)
– 200 g rice
– 1 large red bell pepper
– fresh herb (parsley, basil)
– 1 tsp ground black pepper
– 1-2 tsp salt
– 2 tbsp extra virgin olive oil
– 1 tbsp lemon juice

INSTRUCTIONS
1. Cook rice according to the package instructions.
2. Transfer cooked rice to salad bowl and cool it.
3. Remove the seeds and cut the red bell pepper.
4. Grill the peppers in a frying pan.
5. Cut peppers into small pieces and add to the rice.
6. Add some parsley or any fresh herb.

Salad dressing:
Mix ground black pepper, salt, extra virgin olive oil and lemon juice.
Add to the salad and mix it well.

I like to serve it on a fresh lettuce leaf.
