My immense treasure – the Harissa recipe.🥫
Harissa is a paste made from chili peppers. Traditionally, it’s made from roasted sweet peppers, hot chili, garlic, cumin, olive oil, coriander, smoked paprika, and caraway. This spice paste is ubiquitous in North Africa and the Middle East and is added to almost everything.
I add Harissa everywhere: spread on baked eggplants, added to omelets, spread on toast or flatbreads with meat. It makes everything brighter and more affluent.
INGREDIENTS 🥫
• 3-5 dried chili peppers
• 3 roasted red sweet peppers (whole)
• 2 tablespoons tomato paste
• 1 teaspoon dried garlic powder (fresh can be used, but then the paste won’t last as long)
• 1 teaspoon toasted and ground cumin
• 1 teaspoon ground coriander
• 1.5 teaspoons ground caraway
• 2 teaspoons smoked paprika
• salt
• Juice of 1 large lemon
METHOD
1️⃣ Bake the peppers for 25 minutes at 220°C. Peel the roasted peppers.
2️⃣ Pour boiling water over the dried chili and leave for half an hour.
3️⃣ Mix all the ingredients in a blender and blend well.
4️⃣ Transfer the paste into a small jar, pour olive oil on top, and store in the refrigerator for several days (or freeze part of the portion).
