1) Potato calzone
INGREDIENTS 600g potatoes 100g parmesan cheese salt pepper 2 tbsp olive oil 250g flour ham cheese METHOD 1. Boil the potatoes or cook them in the microwave for about 10 minutes. Mash the potatoes and add the flour, and the Parmesan cheese, salt and pepper. 2. Spread out the mixture on a sheet of parchment paper and cut out some circles. 3. Place cheese and ham on one circle and make a calzone. 4. Pour some olive oil in a pan and cook each calzone for 5 minutes on each side. 5. Your potato calzone is ready to serve!

2) Potato lasagna
INGREDIENTS 5 large potatoes, peeled, thinly sliced; 200 g (7 oz) sliced ham; 150 g (5 oz) sharp cheese, shredded; 200 g (7 oz) mozzarella, shredded; 2 eggs; 300 g (1 ¼ cup) cream; ½ cup bacon, cooked, crumbled. METHOD
Cover sliced potatoes with cold water and add a generous pinch of salt. Set aside for 15 minutes, then drain and pat dry.
Layer potato on the bottom of a square baking pan, slightly overlapping. Top with ham and both kinds of cheese, then add another layer of potatoes and repeat until you fill the pan. Cover second to the last layer of potato with crumbled bacon. Add another layer of potato on top and add leftover cheese.
Bake at 180C/350F for 90 minutes.

3) Fried cheese bread
INGREDIENTS ● Potato – 500g ● Egg – 1 ● Vegetable oil – 2 tbsp ● Salt – 1 tsp ● Pepper – 3/4 tsp ● Parsley – 1/2 bunch ● Flour – 240g ● Baking powder – 10g ● Cheese – 200g METHOD 1. Boil the potatoes in their peel, peel and crush in mashed potatoes. 2. Add the egg, butter, salt, pepper, parsley, flour and baking powder to the puree. Mix well. 3. Divide the dough into 4 parts and roll 4 flat cakes, the diameter of your pan. 4. Put 6 slices of cheese on one cake and cover with a second cake. Pinch the edges. 5. Cut the tortilla into triangles so that the cheese remains inside. 6. Fry such cakes for 5-7 minutes on each side.
