Ingredients:
For the Cake:
2 cups oat flour, or ground oats (200g)
1 cup spelt, or whole wheat flour (125g)
1 tsp cinnamon powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
4 medium-sized bananas, mashed (450g)
2 tsp vanilla extract
1/4 cup maple syrup, honey, or agave (60ml)
4 large eggs
1/2 cup milk
1 tbsp lemon juice
1/2 cup almond flakes (50g)
For the Frosting:
2.5 cups strained Greek yogurt (700g)
2.5 tbsp honey

In a small cup, mix together the milk and lemon juice. Set aside for a few minutes.

In a large bowl, mash the bananas with a fork or potato masher.

Add the vanilla extract, maple syrup (or honey/agave), and eggs to the mashed bananas. Beat with a mixer for about a minute until slightly foamy.

Stir in the milk and lemon juice mixture, giving it a quick mix.

In a separate bowl, combine the oat flour, spelt flour, cinnamon powder, baking powder, baking soda, and salt. Whisk everything together until well blended.

Pour the dry ingredients into the wet mixture and mix until just combined. Do not overmix.

Preheat your oven to 350°F (180°C). Line a 13×9 inch baking pan with parchment paper.

Pour the batter into the prepared pan and sprinkle the almond flakes evenly over the top.

Bake for about 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

In a medium bowl, combine the strained Greek yogurt and honey. Beat with a mixer until smooth and creamy.

Once the cake is completely cooled, spread the frosting evenly over the top.

Smooth the surface and chill the cake in the refrigerator for at least 30 minutes, or longer for best results.

Slice the cake into 12 equal pieces. Serve and enjoy!
