Ingredients
125g bread flour
1 egg, beaten
55g cold water or milk 65g
15g sugar
1.5g salt
5g milk powder
1.5g instant dry yeast
10g unsalted butter, cut into pieces and softened
1/2 sesame seeds (optional)
🍇Steps
🍇Make the basic dough:
Step 1: Put 1.5g instant dry yeast, 25g egg wash, and 55g cold water in a large bowl (use a stand mixer or food processor if you prefer) and stir until the yeast dissolves.
Step 2: Add 125g bread flour, 5g milk powder, and 15g sugar and mix well until a rough dough forms, about 5 minutes, then add 10g butter and knead for 10-12 minutes, until the dough is very smooth and elastic and just a bit tacky.
Step 3: Transfer to a lightly oiled bowl and cover. Let rise in a warm place until doubled in size, about 1 to 2 hours, or refrigerate overnight.
🍇Take 195g the basic dough, divide it into 3 equal pieces (65g each), and shape them into balls. Cover and let rest for 15-30 minutes.
🍇Shape according to the method in the video.
🍇Let the shaped bread rise in a warm place until doubled in size, about 45-60 minutes.
🍇Brush the surface of each bread with the egg wash, and sprinkle with sesame seeds.
🍇Bake in a preheated oven at 180°C(350°F) for 13 minutes.
Remove from the oven and let cool for 8-10 minutes before serving.
