Carrot Coriander Soup

Ingredients:

1-2 tablespoon olive oil or any oil
1 chopped onion
500 grams carrots
1 tablespoon coriander powder
1,2-1.5L vegetable stock
2 tablespoons chopped coriander
salt and black pepper to taste

Method:
Sauté the onion for few minutes and add the carrots. After few minutes add the coriander powder and sauté for few seconds .
Pour the vegetable stock and cook until the carrots are soft.
Blend everything and bring to boil again and add your chopped coriander.

Courgette Soup

Ingredients:

1 tablespoon olive oil or any oil
2 courgettes
1/2 onion
2-3 cloves garlic
1 celery stick
1 cup green peas
1.5L vegetable stock
2 tablespoons chopped parsley
salt and black pepper to taste

Method:
Sauté the onion, celery and garlic for few minutes and add the courgettes.
Pour the vegetable stock and cook until the vegetables are soft.
Blend everything and bring to boil and add parsley.
