The dressing is a spin on an old Ethan Chlebowski Recipe, he used it to dress a chicken Spiedes sandwich and it’s been in my rotation ever since.
1 16 oz can white beans, drained & rinsed1 16 oz can chickpeas, drained & rinsed1 pint cherry tomatoes, quartered1 cup chopped pepperoncini peppers3/4 cup chopped kalamata olives1 medium cucumber, diced1/2 bunch dill (optional)Greek dressing to taste (store bought or use the recipe at the link in my bio)
