No Maida, No Cream Healthy Vegetable Pasta

Looking for a delicious, guilt-free pasta recipe that’s packed with protein and loaded with veggies? This healthy vegetable pasta, made with a sauce of paneer and Kashmiri red chillies, is the perfect choice!

Using lentil pasta instead of the traditional refined flour variety, this dish is high in protein and absolutely mouthwatering. With a rich sauce, tons of veggies, and a sprinkle of parmesan, this pasta is not only nutritious but also super easy to whip up in just 20 minutes.

Ingredients:

* 200g lentil pasta (or any gluten-free pasta of your choice)
* 100g paneer, crumbled
* 2-3 Kashmiri red chillies, soaked in warm water
* 1/2 tsp Kashmiri Red Chilli pdr
* 2 tsp oil
* 1 medium onion, chopped
* 2 garlic cloves, minced
* 1 cup red and yellow bell pepper, cut into cubes
* 1 medium zucchini, diced
* 1/2 broccoli florets
* 1/2 cup corn
* 1 tsp mixed dried herbs
* Salt to taste
* 1/4 cup water or pasta water
* Grated parmesan cheese (optional)
* Fresh basil for garnish (optional)

Instructions:
1. To a blender add paneer, soaked Kashmiri red chilli, salt, water, Kashmiri chilli pdr & blend
2. Heat oil, add garlic, onion, broccoli, bell peppers, corn
3. Add mixed herbs, and chilli flakes, and saute till veggies are cooked
4. Add zucchini, the blended paste, pasta water, boiled pasta & cook for 3-4 mins
5. Grate some cheese & ENJOY!!!
