Calorie Deficit Queen
Creamy chicken and rice soup:

198g diced celery
198g diced white onion
1 tbsp minced garlic
Salt and pepper
1 lb ground chicken
1/2 tsp paprika
1/2 tsp ground mustard
1 tsp Italian seasoning
Chili flakes as desired
4 tbsp all purpose flour
48oz chicken broth (low sodium)
1 cup rice, measured dry
85 grams chopped carrots
1 cup unsweetened oat milk
Spray oil

In a pot on medium heat, coat the bottom with spray oil and sautee the celery, onion and garlic for 4 to 5 minutes or until softened. Add the ground chicken, salt and pepper and cook until the chicken is browned. Stir in the seasonings and then add the flour. Mix with a wooden spoon until well combined. Add the broth and bring to a boil. Once at a boil, add the carrots and the cup of rice, stir and lower heat to simmer. Cover the pot and simmer for 15 minutes. Remove the lid and stir in one cup of oat milk. Allow to cook for 2-3 more minutes and then remove from heat. The soup will thicken as it cools.

Makes 4 servings at 2 1/4 cup per serving
