Recipe:
Roast your chosen vegetables in cubes
Sauté diced onion and garlic and crushed pistachios (unsalted)
When ready, combine with chopped cranberries, arugula and dressing!
Dressing:
3 tbsp balsamic glaze
1 teaspoon Dijon mustard
1 teaspoon maple syrup
1/2 teaspoon Celtic salt
1/4 teaspoon freshly ground black pepper
Dash garlic powder
1/4 cup extra-virgin olive oil
*play around with it to your taste! More salty or sweet or oily..
To meal prep: leave out the arugula and dressing until serving
