INGREDIENTS
🌿 20g fresh flat-leaf parsley
🍃 20g fresh basil leaves
🌱 20g fresh mint leaves
🫙 3 tbsp brined capers
🧄 2 cloves garlic, peeled
🍶 1 tbsp red wine vinegar
🫒 5 tbsp Mr Organic Extra Virgin Olive Oil
🧅 1 onion, finely chopped
🫘 2 tins Mr Organic Butter Beans
🍋 Juice of 1 lemon
🌶️ 1 red chilli, optional
🧂 Salt and pepper to taste
✨ Seeds to garnish
🥖 Bread to serve
INSTRUCTIONS
1. Make the salsa verde by blending together the fresh herbs, capers, garlic, red wine vinegar and olive oil in a small blender.
2. Drain off half of the can of one can of butter beans but don’t drain the liquid from the other can.
3. Heat 2 tbsp of oil in a pan and add in the onion. Cook it down until soft with a little salt, then add in the butter beans and their remaining liquid. Simmer for around 10 minutes until the beans are soft and the stock has reduced a little. Season with pepper and squeeze in the lemon juice.
4. Stir in the salsa verde, remove from the head and serve immediately with toasted bread – enjoy!
