Anybody have a hard time making healthy lunches for themselves. Sometimes it’s easier to munch on your kids left over mac & cheese, PB&J, or run through sonic drive through. With a little bit of prep work you can have 3 yummy salads in your fridge ready to eat and beat that lunch time stress. Now you can grab that strawberry limeade from Sonic, but skip the food.
Salad in a Jar
(Recipe adapted from ourbestbites.com)
5 wide mouth mason jar or other container
3 cups shredded chicken
3/4 cup shelled edamame (in frozen section)
1 1/2 cups diced bell peppers
1/2 cup sliced green onions
3/4 cups roughly chopped cilantro
3 cups cabbage mix
3 cups kale
Place 1 cup chicken in each jar, layer with 1/4 cup edamame, 1/2 cup sliced peppers, some green onions and 1/4 cup cilantro. Add coleslaw mix and kale, pressing down as you put it in. Twist lids on jars and store in fridge for up to a week. When you are ready to eat, dumb salad into bowl and pour on top and mix.
Dressing for Salad
2 tablespoons rice wine vinegar
1 1/2 teaspoons Lime Extra Virgin Olive Oil (or olive oil and a squeeze of lime juice)
1 teaspoon PB2 (peanut butter powder)
pinch of kosher salt
pinch black pepper
