Delicious and Healthy Quinoa Pancakes with Berries Recipe
Ingredients:
• 2 cups quinoa
• 1 ¼ cups soy milk (or other plant-based milk)
• 3 or 4 tablespoons of silan (date syrup), honey, or maple syrup (or sugar)
• 2 tablespoons apple cider vinegar
• 1 teaspoon baking soda
• 1 banana
Toppings:
• Yogurt
• Blueberries
• Strawberries
• Apricot
• Banana
• Honey
Instructions:
1. Soak the quinoa in water for a few hours, then rinse thoroughly.
2. Place all the ingredients into a blender and blend on high for 30 seconds to 1 minute until smooth.
3. Heat a non-stick skillet well.
4. Pour small amounts of the batter into the skillet and flip when the pancake is ready on one side.
5. Serve with your favorite toppings!
