Ingredients:
2 tbsp coconut oil
1/4 cup yellow onion, small diced
2 garlic cloves, minced
1 tsp ginger, minced
1 tsp curry powder
1 tsp coriander
Sous vide cubed chicken (Kevin’s Thai-Style Coconut Chicken)
1 packet Thai coconut curry sauce (Kevin’s Thai-Style Coconut Chicken)
1/2 cup chicken stock
1 bay leaf
Dash of cayenne pepper
Salt and pepper, to taste
1/2 medium red bell pepper, sliced
1/3 cup shredded carrots
Cooked brown rice, for serving
Fresh cilantro, for garnish
Instructions:
Heat 2 tbsp of coconut oil in a pan. Sauté diced onions until softened.
Add garlic, ginger, curry powder, and coriander. Cook until fragrant.
Stir in sous vide chicken and coat evenly.
Add Thai coconut curry sauce, chicken stock, bay leaf, cayenne, salt, and pepper. Simmer gently.
Toss in red bell peppers and shredded carrots. Cook until veggies are tender.
Serve over warm brown rice and garnish with fresh cilantro.
