Flourless Chickpea Buns Recipe

Ingredients:

2 cups cooked chickpeas (or one 15-oz can, drained and rinsed)

2 large eggs (or flaxseed egg for vegan option: 1 tbsp flaxseed meal + 3 tbsp water)

1/4 cup plain Greek yogurt (or plant-based yogurt for vegan option)

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp apple cider vinegar

1/2 tsp garlic powder (optional, for flavor)

1/2 tsp onion powder (optional, for flavor)

Instructions:

1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Blend chickpeas: Add the cooked chickpeas to a food processor or blender. Blend until smooth, scraping down the sides as needed.

3. Add wet ingredients: To the blended chickpeas, add the eggs (or flaxseed egg), yogurt, and apple cider vinegar. Blend again until well combined.

4. Mix dry ingredients: In a small bowl, whisk together the baking powder, baking soda, salt, garlic powder, and onion powder.

5. Combine: Add the dry ingredients to the food processor and blend until you have a smooth, thick batter.

6. Shape the buns: Scoop out portions of the batter (about 1/4 cup each) onto the prepared baking sheet. Shape them into bun-sized rounds with wet hands to avoid sticking.

7. Bake: Place in the oven and bake for 20–25 minutes, or until the buns are golden brown and firm to the touch.

8. Cool and serve: Let the buns cool on a wire rack before serving.

Tips:

Store the buns in an airtight container in the fridge for up to 5 days or freeze for longer storage.
