This cobb salad is one of those lunches that you prepare when you know it’s going to be a hectic or intense day.
Plus, my man’s a tradie and a business owner who’s on his feet all day & using his brain a lot – i know this filling lunch will tick all the boxes for him too!
Ingredients (for 2 x people):
– baby gem lettuce chopped
– cherry tomatoes chopped
– spring onion (or chives) sliced
– red onion sliced
– bacon: i used 1 packet of @unclessmallgoods free range bacon here
– turkey: i used 1 packet of @gamzesmokehouse free range turkey here
– boiled eggs: i used pasture-raised eggs here
– avocado
optional:
– blue cheese is a popular addition – i’ve crumbled it over the salad before and it was delicious
– ham can be used instead of turkey! (@bangalowsweetpork leg ham is delicious!!)
– add nuts if you wish! walnuts would be nice here.
Dressing:
– 1/4 cup organic apple cider vinegar, with the mother
– 1/4 cup extra virgin olive oil
– pinch of salt, pepper
– 1 tsp mixed herbs or dried oregano
– 1/2 tbsp raw organic honey
– 1 chopped garlic clove or shallot (optional for work lol)
– 1 heaped tsp dijon mustard
