Gluten Free Zucchini Bread Recipe
Today you’re going to learn how to make healthy zucchini bread.
This oatmeal zucchini bread is so moist and flavorful that even the kids will love it.

First, to make this zucchini bread moist, grate the zucchini on a small side of the box grater. Do not salt and do not squeeze out the liquid from the grated zucchini, that’s what it keep the bread real moist.
Next, after you make the batter you can add other goodies, to make this zucchini bread recipe even more nutritious. Add walnuts or other nuts to your liking, chocolate or dried fruits.
Enjoy this sugar free zucchini bread as it is, or serve with your favorite topping.

BANANA OATMEAL BREAD RECIPE
Ingredients:
2 cups ground oats (or oat flour)
1 tsp baking powder
1 tsp cinnamon
1/4 tsp ground nutmeg
1/2 tsp salt
2 eggs
1/2 cup honey
1/2 cup Greek yogurt
2 tsp vanilla extract
1.5 cups grated zucchini
1/2 cup chopped walnuts
1/2 cup chopped dark chocolate
Preparation:
First grate the zucchini and put it in a colander to drain. Do not squeeze out any of the liquid.
In a bowl, combine wet ingredients, eggs, honey, Greek yogurt and vanilla extract.
In another bowl, combine together the dry ingredients, ground oats, baking soda, cinnamon, ground nutmeg and salt. Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
Pour into greased loaf pan, smooth the top and bake at 350 degrees for 50 minutes. Cover with piece of foil 15-20 minutes before the end of baking, to prevent too much browning.
Let it cool a bit for 10 minutes, then remove from the loaf pan and set on a wire rack to cool completely.
Slice and serve with your favorite topping.
