Air fried quinoa and pumpkin kibbeh 

Air fried | oven baked | healthy

Ingredients
½ a kabocha winter squash 
1 cup quinoa
2 tsp paprika
2 tsp 7 spices
½ cup finely chopped onions
2 garlic cloves minced
½ cup chopped parsley
½ cup chopped mint
Juice of one lemon
1 tsp curry powder
1 veg stock cube
Olive oil
Salt and pepper to taste
2 cups water

Instructions
1. Preheat the oven to 160°C. 
2. Boil water then add quinoa with a pinch of salt and simmer until cooked for about 15 minutes.
3. Peel and cut the pumpkin, place in a baking tray with the paprika, 7 spices, salt, pepper and drizzle with olive oil. 
4. Bake the pumpkin for about 20 minutes or until completely soft. Allow to cool. Mash. 
5. Combine all ingredients together in a large bowl and mix by hand.
6. Shaping into a kibbeh.
7. Preheat air fryer or oven to 200°C and cook for about 15 minutes or until golden brown.
