Ingredients:
• Pasta of your choice (spaghetti, penne, fusilli)
• Fresh pesto
• Garlic cloves
• optional Pine nuts (or walnuts/cashews)
• Grated Parmesan cheese
• Extra virgin olive oil
• Salt & pepper
• Lemon juice (optional for brightness)

Instructions:

Boil the pasta in salted water until al dente. While it’s cooking, make the pesto by blending fresh basil, pine nuts, grated Parmesan, garlic, salt, pepper, and a splash of lemon juice in a food processor. Slowly drizzle in olive oil while blending until you get a smooth, creamy sauce.

Drain the pasta, saving a bit of the pasta water. Toss the hot pasta with the pesto sauce, adding a little pasta water to help it coat evenly. Garnish with more Parmesan and a drizzle of olive oil. Serve immediately.
