Ingredients
1. 3 eggs ( 1 egg yolk and 3 whites)
2. 2 tbsp low fat mayo
3. 1 tsp garlic powder
4. 1 tsp paprika powder / chilli flakes
5. Chopped green onion
6. Salt & pepper
7. Whole wheat bread
Method
1. Boil eggs for 8 mins and separate the yolk and white
2. In a bowl take 1 egg yolkband mash it. Add mayonnaise, garlic powder, paprika, chilli flakes , spring onion green, salt and pepper
3. Chop the egg whites and add it to the mayo yolk mixture.
4. Assemble – 2 whole wheat slices of bread , the egg mix , some fresh coriander and optional lettuce.
