With spring in the air, I’m bringing you a light, wholesome, and delicious Apple Oatmeal Bread that’s perfect for the season. Made with oat flour and spiced apples, it’s fresh, comforting, and just right for a sunny day.
Whether you enjoy it with your morning tea or as an afternoon treat, this recipe is simple, tasty, and full of feel-good flavors.

Ingredients
For the apple topping:
4 medium-sized apples (grated and chopped)
2 tbsp cane sugar (or any sweetener of choice)
A splash of water
1/2 tsp cinnamon powder

For the batter:
2 eggs
1/4 cup cane sugar (or any sweetener of choice)
1/4 cup olive oil (or any oil of choice)
1 1/3 cup oat flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon powder
1/4 cup plain yogurt

Instructions
Preheated oven at 180°C (350°F).

Prepare the Apple Topping:
Grate and chop 4 medium apples. Add them to a pan with 2 tbsp cane sugar, a splash of water, and stir. Cover and cook for a few minutes until soft and tender. Once done, stir in 1/2 tsp cinnamon powder. Turn off the heat and let the mixture cool completely.

Make the Oat Flour:
While the apples are cooling, blend oats in a blender until fine to make 1 1/3 cups of oat flour.

Mix the Wet Ingredients:
In a mixing bowl, whisk together 2 eggs, 1/4 cup cane sugar, and 1/4 cup olive oil until well combined.

Add the Dry Ingredients:
Add 1 1/3 cups oat flour, 1 tsp baking powder, 1/4 tsp baking soda, 1/2 tsp cinnamon powder, and 1/4 cup plain yogurt. Mix gently until you get a smooth, creamy batter.

Fold in the Apples:
Add half of the spiced apples into the batter and fold them in.

Assemble & Bake:
Pour the batter into a parchment-lined loaf pan and tap it gently to settle. Spoon the remaining apples on top as a beautiful topping.
Bake in a preheated oven at 180°C (350°F) for 50–55 minutes or until a toothpick comes out clean.

Cool & Enjoy:
Allow the bread to cool completely before slicing. Enjoy it with your morning tea or as a light afternoon treat.
