Avocado White Bean Toast //
Ingredients:
– 2 slices whole wheat bread
– radish and tomato slices
– ½ medium ripe avocado (68 g)
– ½ cup white beans (canned or cooked)
– 2 tsp lemon juice
– pinch garlic powder
– pinch ground black pepper
– ¼ tsp salt (or to taste)
– ⅕ tsp red pepper flakes (optional)
Instructions:
In a medium bowl, add the avocado, white beans, lemon juice, garlic powder, ground black pepper and salt and mash with the back of a fork. (You can also use a mini chopper to blend.) Make sure to mix until well combined. Toast the bread slices and spread the white bean avocado mash on the toasts evenly. Top with radish/tomato slices and red pepper flakes (optional).
