EASY BREAKFAST MUFFINS!
Ingredients:
• 1 ripe banana, medium
• 130g (1 cup) self-raising flour (or 130g plain/wholemeal flour + 1 teaspoon baking powder)
• 120g (1/2 cup) milk of your choice
• 2 large eggs
• Unsalted butter for greasing
• Toppings of choice (banana slices, blueberries, strawberries pieces, chocolate chips)
• Optional: for older kids and adults, you can add 2-3 tablespoons of coconut or brown sugar to the batter

Method:
1. Preheat the oven to 180°C (350°F).
2. Add the banana to a large bowl and mash it with a fork.
3. Add all the rest of the ingredients and mix until well combined.
5. Spoon the batter into a lightly greased muffin tin.
6. Top with the toppings of your choice.
7. Bake for 12-15 minutes or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
8. Let them cool slightly before serving.

👶🏼Suitable for babies from 6+ months (avoid chocolate for under 1 year old).
❄️Store in the fridge for a couple of days. Suitable for freezing up to 3 months. Thaw in the refrigerator and reheat in the microwave or oven.
