Ingredients:
2 large chicken breasts (~20oz/560g)
80g (1/3 cup) 2% yogurt
1.5 Tbsp Spicy curry powder
1 Tbsp Salt
2 tsp chili powder
1 tsp cumin
1 tsp ginger paste
10g (~2 tsp) honey
Cilantro Yogurt Sauce (for 4 sandwiches):
240g (1 cup) 2% greek yogurt
10g (~2 tsp) honey
Handful of minced cilantro
Salt & pepper to taste
Corn Flakes
4 brioche buns*

Additional notes:
– For nutritional info purposes, on average, ~15g corn flakes stick to each piece of chicken for each sandwich
– I highly recommend using FAGE brand for the yogurt sauce, many yogurt brands are too thin and may not come out the same. You can also use pre-made Tzatziki for the sauce
– *The buns I used for this recipe are 180 calories each, and not reduced carb. I prefer to use the best quality buns I can find instead of using low-carb bread because the calories are already low enough, and it is worth it for the flavor in my opinion. If you sub in low carb bread, the sandwich will be in the ~350 calorie range. Your call if it’s worth it for the cals or not! Most of my recipes I stick with standard ingredients, but always feel free to sub in low carb options if it is better for your specific diet needs!

HOW TO MEAL PREP:
– This recipe makes 4 sandwiches, or 4 pieces of chicken. If you are an individual, you can just let the extra chicken continue to marinade for several days. Since this recipe doesn’t require the typical breading process (flour + eggs etc, the yogurt marinade serves as the binder) – all you have to do is coat the marinated chicken in corn flakes, then add to the air fryer to cook! The sauce makes 4 servings, so you can store it refrigerated.
– This makes the process extremely simple from start to finish – and is a great type of “meal prep” if you want to simplify dinner throughout the week 🤝
