In this recipe, I used:

4 large eggs 🥚

30g leek 🧅

20g red bell pepper 🌶️

50g grated zucchini 🥒

A pinch of salt & pepper to taste

Method:
1️⃣ Preheat oven to 180°C.
2️⃣ Beat eggs with salt & pepper.
3️⃣ Add chopped leek, red bell pepper, and grated zucchini.
4️⃣ Pour into a greased muffin tin.
5️⃣ Bake for 12–15 mins until set and golden.

I paired mine with a fresh vegetable salad, a slice of peach 🍑, and kiwi 🥝 – a perfect low-calorie weight loss meal!
