You‘ll Need:

*125 g buckwheat flour
*75 g quinoa
*50 g ground almonds or almond flour
*50 g yogurt
*1 tbsp psyllium husks
*1 tsp baking powder
*½ tsp baking soda
*a splash of apple cider vinegar
*½ top salt
*130 g water
*75 g zucchini
*50 g carrot

💡 Fun fact: Ingredients like buckwheat, almonds, and even zucchini are full of anti-inflammatory compounds. So these rolls don’t just taste good – they help your body feel good too.💃🏻

How to bake:

1. Mix psyllium husks with 2 tbsp water and let them sit for 10 minutes until gel-like.
2. Grate the zucchini and carrot into colorful veggie confetti. 🎉
3. Rinse the quinoa really well until the water runs clear – no bitterness allowed.
4. In a big bowl, whisk together all the dry ingredients: flour, almonds, baking powder, soda, salt.
5. Add yogurt, your psyllium gel, quinoa, and that splash of apple cider vinegar. Then fold in the veggies.
→ Don’t worry if it’s sticky – that’s exactly what we want!
6. Let the dough rest: 2 hours on the counter or overnight in the fridge for fresh-baked morning magic.

7. With wet hands, shape 4–5 rustic rolls. They don’t need to be perfect – we’re going for real food vibes.
8. Place them on parchment paper and bake at 180°C / 350°F for 40–45 minutes.
Toothpick test time: if it’s slightly sticky, that’s normal – juicy veggies, remember?
