🌸 A colorful, creamy & nutritious sweet potato salad that’s light, refreshing, and perfect for your fasting days! High in protein (hung curd) + fiber-rich veggies make this salad a wholesome Navratri special.

🥗 Ingredients (2 servings)
For sweet potatoes:

2–3 medium thin sweet potatoes (baked & cut into chunks)

½ tsp groundnut oil

½ tsp salt (adjust to taste)

¼ tsp red chilli powder

½ tsp jeera powder

For salad mix:

200 g hung curd

½ carrot (grated)

½ beetroot (finely chopped)

1 small cucumber (chopped)

Salt & pepper to taste

Juice of ½ lemon

👩‍🍳 Method

1. Bake sweet potatoes until soft, peel & cut into chunks.

2. Heat oil in a pan, add sweet potato chunks, season with salt, chilli & jeera powder. Sauté till golden & slightly crispy.

3. In a mixing bowl, whisk hung curd. Add carrot, beetroot, cucumber, salt, pepper & lemon juice. Mix well.

4. Serve creamy curd salad topped with golden spiced sweet potatoes.
