Sweet Potato Pizza

For the base
Sweet potato(grated) 2 cups
Lemon juice – 2tsp
Salt – to taste
Oil – 1tbsp

For The sauce
Oil – 1tbsp
Chili flakes – 1 tsp
Minced garlic – 2cloves
Onion (finely chopped) – 1
Tomato puree – 1 cup
Mixed Bell peppers – ¼ cup
Chopped zucchini – ¼ cup
Chopped carrot – ½ cup
Salt – to taste
A pinch of sugar
Fresh black pepper – ½ tsp
Oregano – 1 tsp
Grated mozzarella cheese – ½ cup
Cheddar cheese(or any cheese of your choice) – for topping
Black olives (sliced) – for topping

Method
Add lemon juice to the grated sweet potato & keep aside.
In a wok, add some oil, followed by chilli flakes & minced garlic & sauté for a minute.
Then add the chopped onions & sauté till translucent followed by the tomato pureé. Cook for a few minutes. Now add the salt, pepper & mix well.
Then add all the vegetables to this mixture. Add some water, cover & cook.
At this point, place an omelette pan on another flame & once hot, grease with some oil.
Season the grated sweet potatoes & immediately add them to the hot pan on high flame.
With the help of a spatula, press the sweet potato to form an even base. After a minute or so, reduce the flame & allow it to cook on low flame till it turns golden & crisp enough to flip. Usually it take about 4-5 minutes on each side to be done well.
Now move your attention back to the veggies which would’ve cooked by now. Add a pinch of sugar, mix well.
By now the pizza base should’ve been done as well.
For the final assembly, spoon the prepared veggies’ sauce over the base & spread all over.
Now top it with the sliced olives & some bell peppers & cheese. Cover & let it cook till the cheese melts.
Cut it into pieces with the help of a pizza cutter & serve hot.
