In this video, I’m sharing my Healthy Weight Loss Mexican Burrito Bowl — a complete, balanced meal that is high in protein, rich in fibre, and full of flavour.

This bowl is perfect if you’re trying to:
– lose weight in a sustainable way
– eat clean without giving up taste
– prep healthy lunches and dinners
– increase protein and veggie intake

What’s inside this burrito bowl:
• Lemon coriander brown rice
• High-protein Mexican beans
• Fresh homemade guacamole
• Zesty salsa
• Crunchy bell pepper salad
• Cooling hung curd topping

Ingredients
1) Lemon Coriander Brown Rice

Olive oil – 1 tsp
Garlic (chopped) – 3–4 cloves
Sweet corn (boiled) – ¼ cup
Cooked brown rice – ½ cup
Fresh coriander leaves (chopped) – 1 tbsp
Lemon juice – ½ tsp
Salt & black pepper – to taste

2) Mexican Beans

Olive oil – ½ tsp
Garlic (chopped) – 4–5 cloves
Green chilli (chopped) – 1
Soya keema – ¼ cup
Kidney beans / rajma (boiled) – ¼ cup
Oregano – ½ tsp
Italian spice mix – ½ tsp
Smoked paprika – ½ tsp
Homemade tomato ketchup – 2 tbsp
Water – as required
Salt – to taste

3) Guacamole

Ripe avocado – 1
Lemon juice – 1 tbsp
Extra virgin olive oil – 1 tsp
Green chilli (chopped) – 1
Cherry tomatoes – 5–6 (halved)
Garlic – 1 clove (finely chopped)
Salt & black pepper – to taste

4) Fresh Salsa

Tomato – 2 medium
Onion – 1 small
Jalapeños – as per taste
Mexican spice mix – ¼ tsp
Lemon juice – 1 tsp
Sugar – ½ tsp
Fresh coriander leaves – 2 tbsp
Salt & black pepper – to taste

5) Fresh Bell Pepper Salad

Red bell pepper – ½ cup
Yellow bell pepper – ½ cup
Green bell pepper – ½ cup

Dressing
Extra virgin olive oil – 1 tsp
Lemon juice – 1 tsp
Mexican spice mix – ¼ tsp
Salt & black pepper – to taste

For serving: Hung curd as required
