Curd/ dahi cucumber Sandwich is a light, healthy and easy sandwich, made with curd, cucumber and some more vegetables of your choice. But before I move on to the Curd/yogurt sandwich recipe here is a list of few more Indian breakfast recipes that are very healthy.

Ingredients you need to make Curd/ dahi Cucumber Sandwich:-

1cup plain yogurt
14-16 Bread slices
1 cup chopped cucumber without seeds khira
1 cup chopped tomato without seeds
1/4 cup shredded/chopped carrots (gajar)
1/4 cup chopped onion
1/4 cup corns
Salt to taste
1 tsp black pepper
1 tsp finely chopped garlic
1 cup finely chopped cilantro (hara dhania)
1/2 teaspoon minced green chili, optional

Method to make yogurt sandwich:-

1.Put the yogurt/curd in a muslin or cheese cloth. Gently squeeze excess water from the yogurt. Make sure not to squeeze out the yogurt, and leave it at least 30 min or more. The yogurt will become thick in consistency, this is known hung yogurt, and this should make about half cup.

2. Add all the ingredients for filling with yogurt and mix it well.

3. Spread the mix over two slices of bread and cover them with other slice.

4. Heat the skillet/tava over medium heat; grease the skillet with about half teaspoon of butter.
Grill the sandwich from both sides until they are golden brown. This should take about one minute each side.

Sandwiches are ready; serve them with side of salad. Curd/Yogurt sandwiches taste great even at room temperature, and great for lunch box.
