🥕 Ingredients
3 eggplants
400 g chicken breast (diced)
1 large onion (diced)
1 large carrot (grated)
2 cloves of garlic (finely chopped)
2 tablespoons vegetable oil
1 tablespoon tomato paste
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 cup hot water
400 g shredded mozzarella cheese
👨🍳 Instructions
Peel the eggplants in stripes, cut into cubes, and soak in salted water for 15 minutes.
Drain and pre-cook them by lightly frying or baking at 200°C for 15–20 minutes.
In a pan, heat the vegetable oil. Add the onion and garlic, and sauté.
Add the diced chicken and cook until no longer pink.
Stir in the grated carrot, tomato paste, spices, and hot water. Simmer for 5–6 minutes.
In a baking dish, layer half of the eggplants, add the chicken filling, then top with the remaining eggplants.
Sprinkle shredded mozzarella on top.
Bake in a preheated oven at 190°C for 20–25 minutes until golden brown.
