Chocolate Covered Rice Cake PB&J Sandwich
The ultimate healthy snack that tastes like a candy bar but fuels your body!
Ingredients:
• 2 rice cakes
• 1 tbsp unsweetened peanut butter (100% peanuts)
• 2–3 squares of 80% dark chocolate
• 1/2 tsp coconut oil
Homemade Strawberry Chia Jam:
• 3 large strawberries
• 1/2 tsp chia seeds
Instructions:
1. Prep the Jam: Mash the strawberries in a small bowl. Stir in chia seeds and let sit for 20 minutes until it reaches a jam-like consistency.
2. Build: Spread peanut butter onto one rice cake. Layer the strawberry chia jam on top.
3. Assemble: Place the second rice cake on top to create a sandwich.
4. Melt: Melt the dark chocolate and coconut oil in the microwave until smooth.
5. Coat: Pour the melted chocolate over the sandwich and spread evenly.
6. Set: Refrigerate for 20 minutes or until the chocolate shell is firm. Enjoy!
