recipe makes 7 servings, each:
30g protein • 340 calories • 9g fiber

Salad:
2 red bell peppers
3 Persian cucumbers
1 jalepeno
1 shallot
1 lb boneless, skinless chicken breast, shredded or diced (i seasoned with garlic salt, pepper and paprika)
6 oz. Fat free feta (1 container from Trader Joe’s)
2 cans black beans, drained and rinsed
1 pound bag frozen super sweet corn (thaw in microwave and let cool or leave out while preparing salad to thaw)
1/2 – 1 cup fresh chopped cilantro

Dressing:
3 tbsp olive oil (I used Oliva Durado – code: Maggie15 – also on my Linktree)
3 tbsp red wine vinegar
1 tbsp hot honey
juice of 1 lime
seasonings:
¾ tsp cumin
½ tsp garlic powder
¼ tsp paprika
¼ tsp oregano
¼ tsp chili powder
½ tsp salt
¼ tsp black pepper

**can add salt more to the salad, to taste, once mixed
